So, here's what was on the menu for my summer bbq recently. All done in around two hours...Just add Pimms ;-)
For the Meat eaters, a selection of bbq ready marinated cuts of pork and steak, also some lamb and chicken skewers.
For the lone veggie, homemade bean burgers.
A chopped onion and carrot sauted in oil. Add 1/2-1 tsp ground cumin and 2-3 cloves garlic, chopped. Cook another minute or two. A can of beans (any), handful of fresh chopped parsley and season well. Mash and shape into burgers
Freshly home-made bread rolls. There's nothing like your own bread. If you start these 2 hrs before bbq they'll be ready when it is on a warm summer's day They take 15-20 mins work IN TOTAL! excluding the waiting, naturally.
Home made bbq sauce
Put the following list of ingredients into a pot and simmer for half an hour, approx, until thick and reduced:
A can of chopped tomatoes, a half an onion, chopped, 2-3 cloves garlic, chopped, a good splash of worchestershire sauce, a splash of soya sauce/maggi seasoning, good tsp or more of brown sugar, 1/2 - 1 tsp of smoked paprika, salt and pepper.
Bean Salad
Marinade a chopped red pepper, 1/2 a chopped red onion in a few spoons of salad dressing for at least half an hour. Add 2 cans of beans - your faves or what ever you have. This time I had butter and borlotti beans. Add plenty of fresh chopped parsley, a pinch of thyme/savoury. Fresh peas from the garden added too.
Greek Salad
Nice tomatoes, chopped, sprinkled with a tiny bit of brown sugar for extra flavour.
1/2 - 3/4 cucumber peeled, chopped, salted and drained
1/2 red onion, finely chopped, marinated in dressing for at least half an hour
Combine these ingredients with plenty of fresh marjoram, some crumbled feta and black olives
Green Salad
No mayo coleslaw - just shredded white cabbage, grated carrot, chives, toasted seeds with a vinaigrette dressing. It's best to leave sit for a while if you can and add the nuts/seeds at the end.
Grilled baby courgettes from the garden, chunks of corn, and slices of aubergine.
Dessert was a selection of macaroon biscuits, loganberries, strawberries and whipped double cream!
