My veggie modified and adapted version of the Portuguese classic. Very comforting, simple and inexpensive dish!
Ingredients
8oz dried white beans, eg cannellini beans, soaked overnight. (For speed, add 2 cans towards the end of cooking)
4 tbsp olive oil
1-2 onions, halved, sliced
3 cloves garlic
1 chilli, thinly sliced (seeds removed, if preferred)
2 1/2 lbs potatoes, cubed
salt and pepper
3-4 pts veggie stock
1 lb savoy cabbage or spring greens, sliced
2-3 veggie sausages, fried, thinly sliced
Directions
1 Drain beans, put in saucepan with plenty fresh cold water. Boil, then simmer 45-50 mins or until tender. Drain and collect cooking liquor. Use to make up the stock.
2.Heat oil, add onion, cook covered on a low heat uuntil soft and slightly golden.
3. Add garlic, chillli, potatoes. Cook 2 mins. Add stock, boil, simmer 20 mins, or until the potatoes are tender.
4.Stir in cabbage and beans. Cook 5 mins. Add veggie sausage. Cook another 2 mins.
5. Ladle into warm bowls and serve with good olive oil and crusty bread.
