Vegetarian Chilli - I may have the ultimate recipe...

I'm dying to share a modified recipe from allrecipes.co.uk which, I believe, is the current leader in my ongoing search for the ultimate vegetarian chilli! The criteria for the ultimate vegetarian chilli are to be very VERY tasty, with a "meaty" punch to the flavour. It must be packed with lots of nutrients, esp protein, and have a lot of yummy veggies to up that daily tally, and low in calories and fat. And kind to the budget always helps!

Ultimate Vegetarian Chilli

Serve with a warmed wholewheat tortilla wrap, sliced avocado sprinkled with lime juice, cottage cheese/plain yoghurt with chives, a little grated cheddar and plenty of raw baby spinach salad.

1 tablespoon olive oil
1-2 medium onions, chopped
2 bay leaves
1 heaped teaspoon ground cumin
2 tablespoons dried oregano/majoram
1 tsp smoked paprika
salt to taste!
2 stalks celery, chopped
1 carrot, chopped
1 green bell peppers, chopped
1 red bell peppers, chopped
1-2 jalapeno peppers, chopped
a dried smoked chilli, chopped
3-4 cloves garlic, chopped
1/2 - 1 300g packs quorn mince
2-3 cans chopped tomatoes
chili powder/sauce, also to taste - I used approx 1 tbsp
1 tablespoon ground black pepper
1 can kidney beans, drained
1 can pinto beans/cannellini beans/chickpeas, drained
1 can black beans
tomato puree/passata

1 Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook a few mins, then mix in the celery, carrot, peppers, jalapeno peppers, smoked chili, chili powder, smoked paprika & garlic. Reduce heat to low, cover pot, and cook 5-10 minutes.

2 Mix the cans of tomatoes into the pot and puree/passata, if using. Season. Boil and simmer 15 mins. While it's cooking, prep all the accompaniments

3 Stir in the beans. Bring to a boil, reduce heat to low, and simmer 20 minutes. Stir in the quorn, and continue cooking 5 minutes before serving.
